Chicken and biscuit dumplings

There’s a new staple in my pantry…buttermilk biscuits from Biscuit Head. I’m a fan of cozy comfort foods and have previously made them using Parmesan cheese and flour. I was out of Parm and having a snow day with biscuit mix in the pantry…I’ll never do dumplings any other way. They floated on my chicken stew like fluffy clouds. Then I had left over batter for breakfast biscuits the next day.

I make my chicken and dumplings using what ever chicken I have…it might be chicken thighs or a whole chicken. I keep it simple adding carrots, onion and celery. If you need a guide, try this one from Cuisine at Home but instead of the noodles, use the biscuit mix from Biscuit Head.

The fireplace is on, it’s snowing outside and school is canceled. There’s not a better time for chicken and dumplings than now! For dessert, I’m going all out for this gemutlich feeling and making baked apples. Can you feel the warmth and coziness? The gemutlich feeling is made better when you can look out of your snow globe and stay inside with warm biscuit dumplings.
